Wild Hertenrugfilet
Luxe wild voor de BBQ
Hertenrugfilet is een ware delicatesse voor liefhebbers van wild en leent zich uitstekend voor bereiding op de BBQ. Dit fijne, malse stuk vlees heeft een subtiele wildsmaak en een boterzachte structuur. Doordat het van nature weinig vet bevat, vraagt de bereiding om precisie en aandacht.
Bereiding op de BBQ
Voor de perfecte hertenrugfilet grill je het vlees indirect op een matige temperatuur van ongeveer 120-140°C, tot het een kerntemperatuur van 52-54°C bereikt voor een rosé resultaat. Vervolgens kun je het kort afgrillen boven directe hitte om een mooie korst te krijgen.
Een andere methode is om de filet eerst dicht te schroeien op hoge temperatuur en daarna langzaam te laten garen op een koelere zone van de BBQ. Dit zorgt ervoor dat het vlees sappig blijft en niet uitdroogt.
Extra smaakdimensies
Omdat hertenrugfilet een fijne structuur heeft, komt de smaak goed tot zijn recht met subtiele kruiden zoals rozemarijn, tijm en een vleugje knoflook. Een marinade van rode wijn, jeneverbessen en laurier geeft extra diepgang, maar houd het subtiel om de pure wildsmaak te behouden.
Wil je een extra rooksmaak? Gebruik dan een klein beetje rookhout, zoals eiken of kersen, voor een verfijnd aroma dat niet te overheersend is.
Serveren
Laat de hertenrugfilet na bereiding even rusten, zodat de sappen zich goed kunnen verdelen. Snijd het vlees in dunne plakken en serveer met gegrilde paddenstoelen, een rodewijnsaus of een klassieke cranberrycompote.
Een exclusief stuk wild dat perfect past bij een BBQ op hoog niveau.
HERTENRUG FILET MET WILDSAUS
De Hertenrug filet bestrooien we vooraf met Flor del Delta en we stellen de Big Green Egg indirect en met RVS rooster in op 110 - 120 graden. We plaatsen de Meater en leggen de hertenrug op het rooster.
Ondertussen hebben we de Feuerhand Pyron opgestookt.
We snipperen een ui, 2 tenen knoflook en kneuzen 2 jeneverbessen.DePetromax koekenpan gaat op het vuur van de Pyron met een heel klein beetje olie en als deze heet is doen we hier 1 eetlepel bruine suiker in.
Goed roeren tot de suiker karameliseert en dan blussen we af met 2 el balsamico azijn, 200 ml rode wijn en 200 ml water.
Als hij te warm wordt zetten we hem tussendoor even op de hete grillring van de pyron, dat werkt perfect.
We voegen een takje tijm, rozemarijn , de knoflook, jeneverbes en de ui toe.
Terwijl we goed doorroeren verkruimelen we nog 1 bouillonblokje boven de saus , terwijl we nogmaals goed door roeren.
Ondertussen snijden we 2 plakjes ontbijtkoek in kleine blokjes.
De saus laten we tot de helft inkoken en zeven de saus vervolgens. Nu voegen we de ontbijtkoek toe en roeren tot de koek opgelost is.
Dit zorgt voor de binding en een lekkere speculaasachtige smaak.
Nog wat zout en peper erbij en klaar.
De saus zetten we afgedekt weg bij de terraskachel om warm te blijven.
Als het hert ondertussen een kerntemperatuur heeft bereikt van 48 graden halen we deze van de Big Green Egg en leggen hem even afgedekt weg. Dan verwijderen we de convEGGtor en plaatsen het gietijzeren rooster (tip: zorg dat deze al op kamertemperatuur is).
Alle schuiven open en we stoken het rooster heet.
We leggen de hertenrug filet op het rooster en grillen hem even snel rondom.
Inmiddels heeft het hert een kerntemperatuur van 53 graden en we leggen deze los afgedekt op een warme plek naast de saus om te rusten.
We hadden wat spruitjes en aardappelpartjes voor gegaard en deze roerbakken we met wat spekblokjes in wat olie op de pyron beetgaar.
Dan snijden we de hertenrugfilet aan, leggen er wat groenten naast en schenken er de wildsaus bij.
Echt een topper, ook voor de kerst. Het lijkt misschien een heel verhaal, maar is allemaal simpel om te doen en kan ook binnen in je keuken.
Eventueel zou je de saus en spruitjes vooraf kunnen maken, dan hoef je deze alleen op te warmen.

emotional. heart warming

It was a good book, the relationships with the friends a main part of it. I do wish there was more spice because she slow burned us to death and then gave us this a closed door. Lol

I am begging you to read this book

A group of women trapped in a temple during an invasion who pretend to be sacred priestesses to avoid being killed and it actually works. That is the setup. That is the whole brilliant premise behind the title and honestly it had me from the first chapter.
But what keeps you reading is Edie.
She is not a chosen one, not a warrior, not a princess. She is older, she has already lived a full complicated life before this story starts, and that history shapes every decision she makes. When everything falls apart and she ends up somewhere she never expected to be, she does not transform overnight. She reads the room, adjusts, and keeps going. It sounds simple but it is so refreshing compared to what fantasy usually gives us.
The women around her are just as important. They do not instantly become a perfect found family. They figure each other out slowly, earn each other's trust over time, and what builds between them ended up being one of my favorite things about this entire book.
The romance is slow burn done right. Not manufactured tension, not two people being stubborn for no reason. Real yearning, real patience, real payoff.
The magic and world building are present without being overwhelming. There is a nature and ritual element running through everything that gives the story a distinct feel without stopping to explain itself every five minutes.
The final stretch of this book is something I was not prepared for. By that point you are so invested in these characters that everything carries weight it would not have had on page one.
If you want wall to wall action this is not your book. If you want fantasy that actually makes you feel something, this is exactly your book. One of my favorite reads in a long time. When I was finished reading it, I just kinda sat there... trying to savor every moment of it.
Five stars. I recommend this to everyone I know.

BLEW ME AWAY! Loved every moment

My new FAVORITE BOOK! Priestess by Kara Reynolds blew me away from start to finish. This is a beautiful story about feminine power, sacrifice, self-worth, friendship, found family, healing and love. And the SLOW burn romance is excruciating and exquisite in the best way (“I am beyond temptation, I have been tempted and I have surrendered”). It was especially wonderful to find a fantasy novel with an FMC in her late 30s that is very relatable. It explores the topics of finding love later in life, fertility and the struggles women have with attaching self-worth with motherhood (My mother says all women are mothers in different ways, that we all give birth, just not all to children. Some women give birth to revolutions, to movements, to sanctuary, to art, to brilliance.”) GAHHH love this. I felt so seen. The twists and turns had me on the edge of my seat, dying to turn the pages faster to know what happens and at the same time wanting to slow down and enjoy Reynolds beautiful prose and savor each chapter. The ending was perfect and the authors note made me cry. I CANNOT wait to read Illuminator and Pilgrimess which will be out April 28th!!!! Kara Reynolds is def on my auto-buy list 💚

Take a jaunt to Tintar, a city of blue abalones and black stone set above the angry sea...
Format: Paperback
Edie is a clever, gutsy heroine, who is lucky to be surrounded by a crew of likewise interesting ladies. Their tender moments in the bath and at the bar alike were very lovely, and the themes of female friendship were refreshing.
My favorite parts had to do with the magic of this world, which is very novel. Often there's elemental magic, earth gets the short end of the stick. Not so here. The power of earth in this seaside landscape cannot be underestimated, and I really enjoyed that twist. Earth signs, at least, will rejoice in seeing their element treated with real consideration.
All of the scenes of magic and old gods were A+, and I loved the weirdness of the rocks first coming to her in the forest, then erupting from the ground to let her know without a doubt what her strength was, and finally forming majestic creatures to rescue her new home—all based on the women who had supported and loved her.
The final conflict was excellent. There was a real sense that Edie was going to sacrifice something that she did not want to let go of, which you don't get that often. (Plus, it was pretty funny when a certain someone got tossed over a wall.)
Finally, given the themes of womanhood in this book, I am going to pull a word from the big reviewers' lexicon and say that this book is /timely/. What it says about what women are and are not, how it explores Edie's feelings about her body, were thoughtful and illuminating and, yes, timely and given the political climate we are now in—I will even add /necessary/ to that list.
It's a rich, femme-centric fantasy epic that made me think about womanhood (and motherhood) in a new light.

Woman's experience and the power of female friendships
Format: Kindle
This story was amazing, and had several elements currently lacking from the genre. It was mature, wise, experienced, and empathetic. It was wonderfully representative of women's experience, with the bonds and friendships between them serving as the balm for life's hurts.
**Spoiler alert/warning: Reynolds tackled SA, infertility, teenage pregnancy, and more. Her representation of infertility is the most true-to-form capture of that awful journey that I've ever seen in literature (AND it wasn't "cured" by the love of the "right" man - something that drives me crazy in 99.99999% of stories that try to touch on infertility). She even included the realness of the older infertile woman's response to the teenage pregnancy in a raw and unfiltered way. Another review said it but I'll back it up: Kara knows. And she shows you that she knows.
Thank you for your empathetic writing, Kara Reynolds. Thank you for seeing women and our experiences and representing us on the page. I was touched, moved, inspired, and comforted by the power of female friendships and found family. The romance was gorgeous, even in its predictability. Because it was clear that the true loves of her life were those enduring women who walked life alongside her. Amazing story.
