Psyllium husk is used to retain moisture and help breads from becoming too crumbly. It acts as a binder, and it gives gluten free bread dough the elasticity, flexibility and extensibility it needs so you can actually knead and shape it without any problems. Use to crumb veges, chicken or beef schnitzel. 

Substitutes: if your recipe calls for psyllium husk powder and all you have is psyllium husks - then double (x 2) the amount of husks that you put in.
