夏天的蛋糕希望呈現消暑的感覺，我們用入口即溶的果蓉啫喱層作第一段口感。同時，啫喱層放上顯眼大大粒的芒果，呼應主題「夏之果實」。為了使啫喱層入口即溶，我們花了點時間調配天然果膠和吉利丁的比例，而且加入微量的焦糖提升鮮嫩感。表面裝飾用的新鮮紫蘇葉也起到畫龍點晴的作用，食到的一刻會令整體味道更清新怡人。團隊試食成品那日，正值盛夏的黄昏，工作差不多完成，放入口時感覺是揮灑一天汗水後的完美獎勵！

Worked perfectly
