Nase
Der Crémant verbindet im Duft gelbe und grüne Zitrusfrüchte, Kalk und Austernschalen sowie feine Hefenoten zu einem im Duft sehr appetitlich wirkenden Getränk. Also auf zum ersten Schluck.

Gaumen
Hier zeigt sich mehr Reife als im Duft. Das Zitrische bleibt im Vordergrund, aber hinzu kommen Noten von Wachs, Quitte und etwas mürbem Apfel, was ein wenig an trockenen Cidre erinnert. Der Crémant bleibt dabei immer auf der druckvollen Seite, wirkt frisch, tonisch und saftig mit einer hellen, leicht jodigen Note im Finale. Das Mundgefühl bleibt dabei rund.

Zum Weingut:
Im Jahre 2019 hat Boris Champy die 1984 gegründete Domaine von Didier Montchovet übernommen. Champy, der zuvor Betriebe wie Dominus in Kalifornien, Louis Latour und Clos de Lambrays leitete, übernahm die Domaine, die bereits in den 80er Jahren auf biologische und dann biodynamische Bewirtschaftung umgestellt hat und damit das erste Demeter-zertifizierte Weingut im Burgund war. Das Weingut umfasst heute zwölf Hektar in den einst kühleren Hautes-Côtes de Beaune, die für Boris Champy aufgrund des Klimawandels die Zukunft des Burgund darstellen.

Die Grundweine für den Cremant stammen vom Negoce-Projekt Boris Champys, Petit Aigle, benannt nach dort heimischen dem Schlangen-Adler. Dafür kauft er Trauben von befreundeten Produzenten, die ebenfalls nach biologischen oder Biodynamischen Richtlinien produzieren, um das Spektrum der Lagen und ihres charakteristischen Ausdrucks zu erweitern. Der Cremant besteht zu 100% aus Aligoté und wurde im März 2022 degorgiert.
