Der White Mystery besitzt eine helle Farbe mit einem leichten Rosastich. In der Nase nimmt man frische Zitrusfrucht- und Bergamotte-Aromen und eine leicht geröstete Note wahr. Im Gaumen spürt man eine elegante Säure und eine feine Tannin-Struktur verleiht dem Wein einen langen Abgang.

Vinifikation und Ausbau

Die Sauvignon Blanc und die Pinot Noir Trauben werden sorgsam von Hand gelesen. Beide Sorten werden separat ausgebaut. Der Sauvignon Blanc wird 7 Monate in amerikanischer Eiche ohne Säureabbau, der Blanc de Noir 7 Monate in französischer Eiche mit Säureabbau ausgebaut, anschliessend assembliert.
